Newly published by Shogakukan, the book Aritsugu delves into the history and philosophy that established such a reputation. It’s approachable, elegantly photographed, full of tips and diagrams on knife care, and not to mention, bilingual with texts in English and Japanese.
Leading the event panel are the translators Asher Ramras and Michael Ramirez with special guest appearance from Seattle’s most iconic and beloved sushi chef, restaurateur, and author Chef Shiro Kashiba. At this up-close event, Chef Kashiba will demonstrate a Japanese chef’s most essential knife skill, the Katsuramuki technique, with his Aritsugu knife.
